Serves 3 – 4
Warm pasta bowls in the oven at 100°C (200°F)

1/4 lb. butter, melted
1 lb. vermicelli
1 cup grated provolone cheese
freshly ground black pepper
For two
Same as above, but...
175 to 200 g. Vermicelli (Barilla #3)
2-4 Tbs. Butter
1. Cook the vermicelli al dente. The pasta will cook quickly (about 5 minutes), so test for doneness frequently. Melt the butter while pasta cooks. Drain pasta well and return to the pot.
2. Add half the butter, half the cheese, salt and lots of pepper. Toss lightly, but well.
3. Add the rest of the cheese, more pepper, and toss again gently. Serve in warm pasta bowls.
Serve with Ciabatta bread.
As an appetizer for four, use small bowls and quantities for two.
This is a deceptively simple, but very delicious dish. It depends on good, freshly grated provolone and LOTS of freshly grated black pepper.
