Roasted Broccoli

Serves 4

½ bunch broccoli (about 1 ½ pound) cut into small pieces and florets (about 3 cups)

2 tbs olive oil

1 tbs water

¼ tsp kosher salt

Freshly ground black pepper

image\redcheck.gif Preheat oven to 500 degrees F (250 C)

1.       Toss the broccoli with the oil and water in a shallow baking pan.

2.       Roast 5 to 7 minutes, turning occasionally, until browned.

3.       Remove from the oven, toss with the salt and a few grinds of pepper and serve.
