Pizza Chicken Melt

Serves 2 or as many as you want to make

This quick meal for two or however many was voted the Best 10-Minute Supper in “BBC Good Foods” for January 2003. It’s quick, simple and tasty.

2 small, boneless, skinless chicken breasts

1 tbs olive oil

2 oz/50g Cheddar cheese, grated

4 cherry tomatoes

2 tsp pesto sauce

image\redcheck.gif Preheat the broiler

1.       Sandwich the chicken breasts between wax paper or plastic wrap and beat with a rolling pin until flattened by one-third.

2.       Heat the oil in a medium, non-stick frying pan, add the chicken and cook for 2 minutes on each side until golden.

3.       Grate the cheese and quarter the tomatoes and mix together.

4.       Take the chicken from the pan, spread with one teaspoon pesto and pile the cheese and tomato mixture on top.

5.       Put under the hot broiler for a minute or so to melt the cheese. (Protect the handle with foil if necessary.)

Serve with a green vegetable or salad.
