Hot Water Cornbread Pancakes

Makes about 12 cakes

1 ½ cup corn meal

3 tbs. white flour

1 ½ tsp. salt 

½ tsp. sugar

1 ¼ cup boiling water

1.       Heat a griddle until hot (400°F./200°C). Grease with butter or drippings

2.       Mix ingredients into a batter and drop onto the griddle as pancakes.

3.       Cook until edges are golden brown. Turn and allow 2-4 minutes for the cakes to cook through.

4.       Serve immediately, or reserve in warm oven until all the batter is used.

Serve with butter, maple syrup or blueberry sauce.
