Flank Steak

Serves 2

This recipe is from the famous book “The French Chef Cookbook” by Julia Chlld, assembled from the second season of her television shows. It is a wonderful dish, and quick to prepare – one of her 30 minute dinners.

Marinade:

3 tbs minced scallions or shallots

1 ½ tbs soy sauce

2 tbs olive oil

½ tsp Thyme or “Italian Seasoning”

Big pinch of pepper or drops of Tabasco

Juice of ½ lemon, freshly squeezed

1.       Lightly score the steak on both sides to prevent curling when cooked.

2.       Lay the steak in a broiling pan and cover with half the marinade. Turn the steak and cover with the rest of the marinade.

3.       Cover with wax paper and marinate for at least 20 minutes. If you have longer, place in a refrigerator for up to 2 hours.

4.       Heat the broiler red-hot. When ready to serve the steak, place the broiling pan as close to the broiler as possible and broil for 3 minutes. Turn and broil for another 2 to 3 minutes. Steak will be rosy red,

5.       Slice on the bias and serve.
