Easy Summer Salad

Serves 4

1 package (10 ounces) frozen green peas, cooked, drained
1 can (15 ounces) garbanzo beans, drained, rinsed
1/4 cup sliced pitted ripe olives
1/4 cup vegetable oil
2 tbs cider vinegar
1/2 tsp. salt
1/8 tsp. garlic powder
1/8 tsp. pepper
Lettuce leaves
1/4 cup sesame seeds

1.       Combine green peas, garbanzo beans and olives in medium-size bowl.

2.       Place remaining ingredients except lettuce leaves and sesame seeds in jar with tight-fitting lid; cover and shake.

3.       Pour over pea mixture.

4.       Refrigerate uncovered at least 30 minutes.

5.       Line 4 salad plates with lettuce. Top each with pea mixture; sprinkle each salad with 1 tbs. of the sesame seeds.
