Delicious Everyday Dal

Serves 4-6

1 cup lentils (also known as dal)
4-5 cups water (liquid should include juice if canned tomatoes are used)
salt to taste

1 lb fresh or 1 14 oz can tomatoes, diced (with juice)
1 large onion, finely chopped
2 garlic cloves, minced
2 tbs finely chopped fresh ginger
4 tbs butter
1 tsp. ground turmeric
1 tsp. whole cumin seeds
2 dry red hot peppers or a large pinch of crushed red chillies (to taste)
1/2 cup chopped fresh coriander (cilantro)

1.       Bring all ingredients, EXCEPT fresh coriander, to a boil on high heat. Reduce heat to low, and cook until the dal is tender. This should take 20-30 minutes, depending on which dal you use.

2.       When dal is done, sprinkle cilantro on top, stir and serve hot.

Serve this over Basmati rice. I also use plain yogurt on the side. Indian mixed pickles or chutney on the side are also nice.
