It took us a while to figure out, but crostini are not bruschetta. Bruschetta seem always to have tomatoes in them, crostini do not. Anyway …
For this recipe, you can make the Boursin Cheese with our recipe, or simply buy it. Either way, this tastes great.
8 ounces/250 g Boursin® Cheese
1 recipe Croustades
1 sweet red bell pepper, jullienned in strips about 1 in/3 cm
1 sweet yellow bell pepper. jullienned in strips about 1 in/3 cm
1 red onion, peeled, cut in thin slices and separated
2 small zuchinni, jullienned in strips about 1 in/3 cm
Salt and freshly ground black pepper
3-4 tbs extra virgin olive oil
Preheat oven to 350 degrees F/175 degrees C.
1. Prepare the vegetables and place in a shallow baking pan.
2. Drizzle with olive oil and roast for 30 minutes, stirring occasionally.
3. Sprinkle with salt and pepper and continue to roast for another 15 minutes.
4. Remove from oven and serve in bowls with the cheese and croustades, or prepare as below.
To Serve: Paint croustades with cheese and place about 1 tbs of vegetables on top.
