1 flank steak, about 2 lb.s, with edges scored to prevent curling
The Marinade:
3 tbs minced scallions or shallots
1 1/2 tbs soy sauce
2 tbs olive oil
1/2 tsp. thyme or "Italian seasoning"
Big pinch pepper or drops of Tabasco
The juice of 1/2 lemon
1. Mix the marinade ingredients in a bowl. Lay the flank steak flat in the bottom of a broiling pan and spread on half the marinade.
2. Turn the steak and spread with the rest of the marinade.
3. Cover with waxed paper, and leave for at least 20 minutes, or refrigerate for several hours or a day or two.
4. Broil in oven or cook on grill.
