Bacon, Potato and Leek Pan Fry

Serves 4

1 tbs. olive oil

6 pcs bacon in thin strips

600g/1 lb, 5 oz potatoes, peeled and cut into wedges

2 leeks, thinly sliced

115g/4 oz mature cheddar cheese (see Tip)

salt and pepper

1.       Heat 1 tbs. oil in large fry pan with lid. Add bacon and cook 5 minutes till crisp. Remove and drain on paper towel.

2.       Put potatoes in pan, cover and cook over medium heat for 15 minutes total, stirring occasionally.

3.       After six minutes, add leeks and cook.

4.       Return bacon to pan, season with salt and pepper and stir in the cheese.

5.       Serve hot from the pan.

image\postit.gif Tip: Use up bits of cheese with this recipe. You can use almost anything, just throw it in at the last minute and let it warm while the hungry folk come to the table.
