Makes individual pizzas

This is just a quick way to use up leftovers or make a quick, tasty meal. Use whole wheat or white Pita bread. Cook in a regular oven or toaster oven. Experiment with various spreads, use commercial pesto of various flavors, various commercial or home-made spaghetti sauce, pre-shredded cheese, This isn’t pretty, it’s fast.

1 large whole wheat pita bread


Variation 1

2-3 tbsp Pesto sauce

1 medium tomato, sliced

Fresh Basil leaves

2 tbsp Feta cheese


Variation 2

2-3 tbsp marinara or meat spaghetti sauce

Sliced salami, pepperoni, Italian sausage, artichoke hearts, sliced mushrooms –whatever’s handy

Shredded mozzarella cheese

Pre-heat oven to 500 degrees F.

  1. Spread the pesto or other sauce liberally over the cold pita bread.
  2. Distribute other ingredients evenly over the sauce base.
  3. Sprinkle generously with cheese.
  4. Place in oven. Cook 10 to 15 minutes or until cheese is melted or tomatoes are cooked. Serve immediately.
