Couscous

Serves 4

Couscous is a form of pasta served with many middle-eastern dishes. It’s quick and easy to make, and is available in bulk in most health food stores and many supermarkets. Bulk couscous keeps well in a tightly closed glass jar in the pantry. A commercial brand is “Fisher’s Ala” which is generally good but far more expensive than the bulk product.

Couscous is a good alternative for rice or potatoes.

1 cup couscous

1½ cup boiling water

  1. Place couscous in a serving bowl.
  2. Bring water to a boil and pour over the couscous. Stir once.
  3. Allow to sit, covered (to preserve heat), for about 10 to 15 minutes or until the water is absorbed.
  4. Fluff with a fork and serve.
